Ingredients:

1 cup granulated sugar

1cup cocktail peanuts

½ cup light corn syrup (i.e. Karo)

1 tsp butter (do not substitute)

1 tsp vanilla extract

1 tsp baking soda
Method:

Stir together peanuts, sugar, and corn syrup in a microwave-safe glass baking dish. (plastics will melt)

Microwave on 100% power for 3 minutes and 15 seconds.

Stir

Microwave on 100% power for an additional 3 minutes and 15 seconds.

Stir in butter and vanilla.

Microwave on 100% power for 2 minutes.

Quickly stir in baking soda.

Pour onto an ungreased cookie sheet to 1/8-inch thick, spreading with a spoon if necessary.

Cool before breaking into small pieces.
Notes:
-
When you add the baking soda, the mixture will foam up quite a bit. Stir quickly to decrease the foaming.

This will disintegrate if left in too damp an environment, i.e., don’t make when raining and damp.
