Microwave Peanut Brittle

Ingredients:

  • 1 cup granulated sugar

  • 1cup cocktail peanuts

  • ½ cup light corn syrup (i.e. Karo)

  • 1 tsp butter (do not substitute)

  • 1 tsp vanilla extract

  • 1 tsp baking soda

 

Method:

  • Stir together peanuts, sugar, and corn syrup in a microwave-safe glass baking dish. (plastics will melt)

  • Microwave on 100% power for 3 minutes and 15 seconds.

  • Stir

  • Microwave on 100% power for an additional 3 minutes and 15 seconds.

  • Stir in butter and vanilla.

  • Microwave on 100% power for 2 minutes.

  • Quickly stir in baking soda.

  • Pour onto an ungreased cookie sheet to 1/8-inch thick, spreading with a spoon if necessary.

  • Cool before breaking into small pieces.

 

Notes:

  • When you add the baking soda, the mixture will foam up quite a bit.  Stir quickly to decrease the foaming.

  • This will disintegrate if left in too damp an environment, i.e., don’t make when raining and damp.

  • Will make about 12 servings
